Lisanatti Cheeze
My favorites of the non-dairy cheeses are the Lisonatti Rice Cheeze, Mozzarella Style and the Lisonatti Quesadilla Mexican style soy cheese. They both melt superbly and taste great. The flavors are mild.
I use the mozzarella for grilled cheese sandwiches and home-made pizza. The quesadilla style is perfect for quesadillas (like the name says!), burritos, omelets, nachos and chili rellenos. Either can be shredded and added to your favorite recipes or sprinkled on top of any dish. For Mexican dishes, the Quesadilla cheese come in a jalapeño pepper style that is really nice too. I buy it in WalMart.
Note that these cheeses are not strictly vegan as they contain casein which is a milk protein. However, casein does not add lactose to the cheese.

The only drawback that I have noticed to using these cheeses is that they are sticky and will stick to dental crowns, veneers and bridgework more than dairy cheese as they are not as oily. Use them sparingly and enjoy!
