Bearitos Chili Seasoning

Bearitos makes the best chili mix! It has just the right amount of fire - no need to add an extra jalapeño. The blend of spices chili peppers, onion, garlic and paprika is delicious.
You can follow the directions on the back of the package to prepare your chili with tofu. Or for an enhanced vegetarian red chili, I follow the All Bean Chili option and add a few extra things of my own.
- Chop and sauté half an onion in the bottom of the pot instead of tofu.
- Mix up the beans - use 1 can of kidney beans and 1 can of pinto beans (or substitute black beans for either one).
- Add two carrots, sliced thinly to the chili.
- Simmer for at least an hour. The directions say your chili will be ready in 10 to 15 minutes but it will not be thickened with the flavors properly blended in that short a period of time so simmer longer.
One package of chili seasoning makes enough chili for one meal for four people. If you want leftover chili for the next day, use two packages of chili seasoning and double everything else. I think this chili is actually better the next day.
Bearitos Chili Seasoning makes the perfect chili for Frito pies. To make a Frito pie, throw a handful of Fritos into your bowl of chili and top with the shredded cheese of your choice. I like Lisanatti Quesadilla soy cheese on mine. A truly kid-pleasing meal!
