Enjoy this refreshing salad as a side dish with just about anything. Serve as a main meal salad by itself or with falafel balls or lentils. I always use brine cured Kalamata olives with pits - the flavor is so much nicer than pitted olives. Oil cured black olives are nice too. This salad will keep for an extra day in the refrigerator as it has no lettuce.
Ingredients:
1 carrot - julienned
½ zucchini - sliced into half moons
½ yellow squash - sliced into half moons
½ cucumber - sliced into half moons
1 tomato - cut in to large chunks
½ red pepper - sliced thinly
3 green onions - sliced thinly
¼ cup Kalamata olives with pits
A handful of fresh torn basil leaves
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
1 tablespoon flax oil
Lots of fresh ground black pepper
Sea salt to taste
Crumbled sheep feta (optional)
Combine all ingredients in a bowl, and toss well and serve.
