Tossed Salad with Tofu Croutons Ultratite

Tofu croutons have been a standard item on salad bars in natural foods markets for many years. I always have them when I am at a salad bar. They are super easy to make at home and go well with any salad dressing. For the salad, I find the only thing that is really necessary is the lettuce. Add any salad vegetables you have on hand, top with croutons, mix with dressing and lunch is served! Tossed Salad with Tofu Croutons
Ingredients:
    For the croutons:
    1 pound of extra firm tofu drained well and cut in 1 inch chunks
    1 teaspoon onion powder
    1 clove garlic - pressed
    1 tablespoon sesame oil
    2 tablespoons tamari (substitute Bragg's Liquid Aminos for Candida diet)
  1. Put tofu chunks in to a medium bowl.
  2. Combine oil, tamari, garlic and onion into a marinade.
  3. Pour marinade over tofu and gently mix - you may want to use your hands to mix this to avoid breaking up the tofu chunks.
  4. Let stand for an hour (if you have the time).
  5. Pre-heat your oven to 450 degrees F.
  6. Lightly oil a cookie sheet or use a non-stick cookie sheet if you have one.
  7. Spread the tofu chunks out on the cookie sheet.
  8. Pour any remaining marinade over the top.
  9. Bake at 450 degrees for 25 minutes or until golden brown, turning over after 15 minutes.
  10. Remove from the oven and allow croutons to cool.
  11. Chill in the refrigerator to use on salads.
Ingredients:
    For the Salad:
    Romaine lettuce, torn into pieces
    Any of the following:
    Tomato slices
    Cucumber slices
    Radishes slices
    Red pepper chunks
    Red onion slices
    Baby carrots
    Sliced beets
    Sprouts
    Green or black olives
    Salad Dressing of your choice
    Toss all ingredients including the croutons with salad dressing. Ultra-Tite!
