Go here for dinner! If you are in Aspen, the Explore Bookstore & Bistro is simply not to be missed. This is gourmet vegetarian cuisine at its finest.
Enter the bookstore and go upstairs - the restaurant entrance is in between the architecture book stacks. Very intimate setting - it was once a beautiful Victorian house. The restaurant is in 2 rooms, 6 or 7 tables each. One room has an antique bookstore look with a real fireplace. The other room is patio style dining with windows all the way around and lighted trees outside.
- The menu was almost vegan (I did see goat and feta cheeses in a few dishes).
- Very nice wine list.
- Decaf was served in a French press that held three cups of coffee (nice size!) and soymilk was in the coffee creamer.
- The menu was very reasonably priced for Aspen. Most dishes were $11-$14 with one for $16 and one for $18.
- There were numerous tempeh, tofu and seitan dishes on the menu along with pastas, grains and salads. It was tough to choose what to eat!
The Soup of the day was Cream of Asparagus soup with a soymilk base - Outstanding!!
I had the Roasted Veggie Lasagna for $16. Lasagna noodles, roasted zucchini and yellow squash, mushrooms, onions, red and green bell peppers, tofu ricotta and marinara - to die for! And huge! My portion was at least 4"x6" and 3" deep. Served with toasted focaccia - that was yummy too.
