Mirasol is a taco restaurant (they do have one burrito also). It is small and cozy with regular tables and also a 7 stool bar with TVs to watch. The service was excellent.
They have a big menu of tacos with 4 different veggie tacos to choose from and a toppings bar. For your taco, choose from black beans, pequin potatoes, spicy tofu or roasted veggies and hummus. The 1, 2 or 3 taco platters are served with beans and rice. For the taco shells, you can choose masa, corn, or lettuce wrap. The topping and salsa bar had all sorts of good things to try - corn salsa, chipotle salsa, pico de gallo, tomatillo salsa, jicama slaw, cole slaw and more. A three taco platter cost $6.25 to $7.50. Chips and salsa are included. The house salsa was very fresh with a nice smoky taste - medium hot.
I had the spicy tofu taco and numerous toppings from the bar. The taco was excellent. The tofu was marinated in citrus, herbs and chiles. The taco was filled with tofu and grilled 3 color peppers. The corn salsa and jicama slaw were my favorites on the topping bar - really great! The black beans were super tite! (of course, no lard)
Dan had the roasted veggies and hummus tacos. Seasonal veggies marinated in balsamic vinegar with homemade hummus. I tasted one. It was really good too. We also tried the sides - guacamole, blistered jalapeños and grilled corn. Everything was fabulous. The blistered jalapeños were deadly hot! The margaritas were good too -Mirasol has over 16 different types of tequila on hand to choose from.
