Do you wonder what to do with thick broccoli stalks? Many people cut off the broccoli florets to use in recipes and salads and throw away the stalks. What a waste! They are a delicious and nutritious part of the plant. The outer part of the stalk is very tough, though and must be discarded.
Next time you steam or sauté broccoli, cut of the broccoli crown as you usually would. Next, cut off the bottom of the stalk and peel it with a potato peeler. Slice the stalk into thin rounds and sauté or steam with the crown florets. If you slice the stalk thinly, it will take the same amount of time to cook. If you slice your stalk more that 1/4" thick, you will want to start it cooking a few minutes ahead of the florets so they are ready at the same time.
Use the stems diced in fried rice, sliced in a mixed vegetable sauté, or chunks oven roasted with potatoes and onions. They are particularly nice in curry. When you steam them, try seasoning with a sprinkle of caraway seeds. Delicious!
