What to do with over ripe bananas? - peel and freeze for smoothies and juicer ice cream.
While you can still make banana bread, pancakes and muffins out of over ripe bananas, I like to freeze them. Every freezer should have a supply of frozen bananas on hand - especially if you have children. Simply peel the banana and put it in a freezer bag. Press out the excess air and store in your freezer for up to 4 or 5 months. They will turn brown in the freezer but this will not affect the taste at all and the color will disappear when you use them.
Frozen banana ice cream
Use your Champion juicer with the homogenizer plate instead of the screen. The bananas come out the end exactly like soft-serve ice cream. You can top them with fudge, nuts, strawberries, cashew crème or whatever is your favorite. Your kids will love it! You will love it too as there is no need to add sugar and it is non-dairy.
Smoothies
For a basic fruit smoothie, cut a frozen banana in chunks and put it in your blender. Add a handful of frozen berries and a half to one cup water depending on how thick you like your smoothie. Blend until smooth. For a banana chai smoothie, substitute chai tea for the water. For an extra sweet smoothie, substitute apple juice for the water. You can also add a frozen banana to liven up any other powdered smoothie or shake mix for a perfect breakfast.
